Finch Pastry Flour is finely milled for flaky pastries. Its protein level and extensibility suit laminated doughs such as croissants, puff pastry and Danish, for a crisp crust and light layers.

For best results, keep the butter and dough chilled while laminating, rest the dough between folds, and bake at a high heat (200–220°C).
