Sweet Potato Flour Crepes

Sweet potato flour is naturally gluten-free, vegan, and paleo-friendly. Made with just one ingredient - sweet potato - it’s a great substitute for regular flour in both sweet and savory recipes.

It works for flatbreads, as a soup thickener, and for simple breakfast crepes you can stuff or top with almost anything.

Ingredients
• 1 cup Finch sweet potato flour
• 1.5 cups milk
• 1/4 cup melted butter
• 2 large eggs
• 2 tbsp sweetener / sugar (optional)
• 1 tsp vanilla essence
• 2 pods crushed cardamom
• Salt to taste

Tips
• Add cinnamon or nutmeg for more flavour
• Sweet potato flour is light brown - crepes will be slightly darker. Add green powder or beetroot powder for colour if you like

Method
1. Whisk milk, eggs, vanilla, and butter in a bowl.
2. Mix dry ingredients in a separate bowl, then combine with wet. Batter should be thin and pourable.
3. Or blend everything until smooth. Rest 1 minute.
4. Heat a non-stick pan on medium. Lightly butter if needed.
5. Pour 1/4 cup batter and swirl to make a round crepe.

Serve with banana, strawberries, or raspberries and maple syrup - or stuff with peanut butter and jelly and top with caramelized pears.
